Here’s a traditional Christmas cake recipe that’s moist, flavorful, and perfect for the holiday season:

Ingredients

  • 1 cup (200g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (285g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (120g) dried fruit (such as raisins, currants, or cranberries)
  • 1 cup (120g) chopped nuts (such as walnuts or almonds)
  • 1/2 cup (120ml) brandy or rum (optional)

Instructions

  1. Preheat: Preheat oven to 275°F (135°C). Grease and flour a 10-inch (25cm) tube pan.
  2. Mix Wet Ingredients: Beat butter and sugar until light and fluffy. Beat in eggs and vanilla extract.
  3. Mix Dry Ingredients: Whisk together flour, baking powder, and salt.
  4. Combine: Mix wet and dry ingredients. Stir in dried fruit and nuts.
  5. Bake: Pour batter into prepared pan and bake for 2 1/2 to 3 hours or until a toothpick inserted comes out clean.
  6. Cool: Let cake cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Feed with Brandy: If desired, poke holes in cake and drizzle with brandy or rum.
